Perfect Vanilla Ice Cream
Author: Andrea Curto-Randazzo
Serves: 1 Quart
Ingredients
  • 1 1/4 cups whole milk
  • 2 cups heavy cream
  • 5 large egg yolks
  • 3/4 cups vanilla sugar
  • 1 tsp vanilla bean paste
  • Pinch of salt
Instructions
  1. In a large saucepan over medium-low heat whisk together the milk, cream, egg yolks, sugar, and vanilla bean paste. Add a pinch of salt. Stir constantly with a wooden spoon until thickened. Remove from heat and allow to cool.
Pour mixture through a fine sieve into a bowl and cover surface directly with plastic wrap. Refrigerate for at least 3 hours or up to 12 hours.
  2. Once chilled, freeze the mixture in your ice cream maker according to the manufacturer’s instructions (each machine is different!). Scoop the ice cream into a freezer-safe container, cover, and allow to sit in the freezer for 1 to 2 hours before serving. Enjoy!
