Brown Ale Honey Glazed Chicken Wings

- 3 Pounds of Chicken Wings
- *For the Red Chile Oil:
- 3 New Mexican Red Chiles
- 1½ Cups Vegetable Oil
- ½ Cup Olive Oil
- *For the Marinade:
- 2 Oranges, Halved & Sliced
- 2 Limes, Halved & Sliced
- 6 Cloves Garlic, Chopped
- 6 Serrano Chiles, Thinly Sliced
- 1 Knob Ginger, Chopped
- 1 Red Onion, Halved & Sliced
- 1 Bunch Cilantro, Chopped
- 1 Bottle Brown Ale
- ¾ Cups Vegetable Oil
- ½ Cup Red Chile Oil (See Above)
- *For the Brown Ale Honey Glaze
- 1 Bottle Brown Ale
- 4 Cups Orange Juice
- 1½ Cups Honey
- 6 New Mexican Red Chiles
- 2 Tbsp. Ginger, Chopped
- ¼ Cup Lemon Juice
- ½ Tsp. Salt
- Prepare the red chile oil by toasted the chiles in a 400 degree oven for 1 minute. Place the chiles in a blender, add vegetable oil and olive oil, and puree until smooth. Set aside for 30 minutes.
- Make the marinade by combining orange slices, lime slices, garlic, Serrano chiles, ginger, red onion, cilantro, brown ale, vegetable oil, and red chile oil in a large bowl. Add in the chicken wings and allow to marinate in the refrigerator for 6 hours, or up to 24 hours.
- When you're ready to cook the wings, preheat your oven to 400 degrees. Remove the chicken wings from the marinade, place on a sheet pan, and bake for 12 minutes.
- Meanwhile, prepare a gas or charcoal grill. Make the honey glaze sauce by combining the brown ale, orange juice, honey, red chiles, ginger, lemon juice, and salt in a medium bowl. Place the chicken wings on the grill and cook, turning until done, about 5 minutes per side. Brush the wings with the honey glaze sauce and allow to cook an additional minute on each side.
