Ingredients
  • 3 Pounds of Chicken Wings
  • *For the Red Chile Oil:
  • 3 New Mexican Red Chiles
  • 1½ Cups Vegetable Oil
  • ½ Cup Olive Oil
  • *For the Marinade:
  • 2 Oranges, Halved & Sliced
  • 2 Limes, Halved & Sliced
  • 6 Cloves Garlic, Chopped
  • 6 Serrano Chiles, Thinly Sliced
  • 1 Knob Ginger, Chopped
  • 1 Red Onion, Halved & Sliced
  • 1 Bunch Cilantro, Chopped
  • 1 Bottle Brown Ale
  • ¾ Cups Vegetable Oil
  • ½ Cup Red Chile Oil (See Above)
  • *For the Brown Ale Honey Glaze
  • 1 Bottle Brown Ale
  • 4 Cups Orange Juice
  • 1½ Cups Honey
  • 6 New Mexican Red Chiles
  • 2 Tbsp. Ginger, Chopped
  • ¼ Cup Lemon Juice
  • ½ Tsp. Salt
Instructions
  1. Prepare the red chile oil by toasted the chiles in a 400 degree oven for 1 minute. Place the chiles in a blender, add vegetable oil and olive oil, and puree until smooth. Set aside for 30 minutes.
  2. Make the marinade by combining orange slices, lime slices, garlic, Serrano chiles, ginger, red onion, cilantro, brown ale, vegetable oil, and red chile oil in a large bowl. Add in the chicken wings and allow to marinate in the refrigerator for 6 hours, or up to 24 hours.
  3. When you're ready to cook the wings, preheat your oven to 400 degrees. Remove the chicken wings from the marinade, place on a sheet pan, and bake for 12 minutes.
  4. Meanwhile, prepare a gas or charcoal grill. Make the honey glaze sauce by combining the brown ale, orange juice, honey, red chiles, ginger, lemon juice, and salt in a medium bowl. Place the chicken wings on the grill and cook, turning until done, about 5 minutes per side. Brush the wings with the honey glaze sauce and allow to cook an additional minute on each side.
